Pumpkin Cookies
Pumpkins..they’re not just for carving!
Ingredients:
2 ˝ cups all purpose flour
1 teaspoon baking powder
1 teapoon baking soda
2 teaspoons cinnamon
˝ teaspoon nutmeg
˝ teaspoon cloves
˝ teaspoon salt
˝ cup butter, softened
1 ˝ cups sugar
1 cup canned pumpkin
1 egg
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Combine flour, baking powder,
baking soda, cinnamon, nutmeg, ground cloves, and salt; set
aside. In a medium bowl, cream together the butter and sugar.
Add pumpkin, egg, and vanilla, and beat until creamy. Mix in dry
ingredients. Drop on cookie sheet by tablespoonfuls; flatten
slightly. Bake for 15 to 20 minutes in the preheated oven. Cool
cookies, then drizzle glaze with fork.
Glaze recipe
2 cups confectioners' sugar
3 Tablespoons milk
1 Tablespoon melted butter
1 teaspoon vanilla extract
Mix sugar, butter and vanilla together, then add milk a
tablespoon at a time, until the glaze has the right
consistency—it should be thin enough to drip off the fork.
Mini Pizzas
You don’t need to phone out for pizza or heat up the frozen
stuff anymore. These treats can be made fresh in a few minutes!
English muffin OR Pita bread
Pizza sauce (from the jar or home made)
Shredded mozzarella cheese
All the good stuff you want: mushrooms, pepperoni, anchovies,
etc
.
Split the English muffin or pita bread. Place the muffin/bread
soft side up. Top with sauce, cheese and any other stuff you
want. Put on a baking sheet and put under the broiler. It takes
less than one minute to cook, so watch carefully! These are the
pizzas that our older campers make the day after their
overnights and there are never any leftovers!
Home Made Applesauce
When we go apple picking each fall, we always end up with tons
of apples. What to do with them all? Make your own applesauce!
4 medium apples
1/4 cup sugar (white or brown)
cinnamon
water
Peel and core the apples. Cut into small pieces. Put the apple
pieces, sugar, water and a few shakes of cinnamon into a pan.
Cover the pan and simmer for 15-20 minutes. Let the apples cool,
then mash them with a fork or a potato masher, or pulse quickly
in a food processor.
